Founded in 1952 by Petru Ungureanu and Nikolai Sobolev, Cricova occupies 15th-century limestone mines 15 km north of Chișinău. The galleries span 120 km at depths of 100 m, holding a constant 10–12 °C and 97–98 % humidity. Underground streets carry grape names — Sauvignon, Cabernet, Riesling — complete with traffic lights and road signs. With over 1.25 million bottles stored (some dating to 1902) and annual output exceeding 1.3 million bottles, Cricova is Moldova's largest sparkling producer and the first in the country to use Méthode Traditionnelle. Moldova's Parliament declared the complex National Cultural Heritage.
